Uncle Nate’s Fettuccini Alfredo

Processing…
Success! You're on the list.

Who can say no to fettuccini alfredo? For sure not me. Uncle Nate’s Fettuccini Alfredo sauce is made from scratch but is so easy to make it is almost like dumping it out of a can. There is plenty of extra sauce for dipping your bread into, because what is a better side dish to carbs than carbs? It is called Uncle Nates Fettuccini Alfredo Sauce because, well, it is Uncle Nate’s recipe. Pair this delicious dinner with my Homemade French Bread and your taste buds might just explode from the best meal ever.

My main goal is to bring families back to the kitchen table enjoying homemade meals. I don’t want it to feel overwhelming or like it has to be these extravagant meals that use every dish that you own.

More doable family meals: Sloppy Joe Pasta Casserole, Sheet Pan Dinner, Creamy Sausage Pasta and White Sauce Chicken Enchiladas.

Ingredients

  • 1 medium size chicken breast
  • 2 Tbsp olive oil
  • salt and pepper
  • 3 cups of pasta, I like using penne style pasta but you can definitely use fettuccini noodles
  • 1/2 stick of butter, 4 Tbsps
  • 1/4 cup flour
  • 2 1/2 cups whole milk
  • 2 1/2 tsp garlic salt
  • 1/4 cup ranch dressing
  • 1 1/2 cups shredded parmesan cheese

Instructions

  1. In a large sauce pan over medium heat add 2 Tbsp olive oil. Using scissors cut your chicken into bite site peices. Add to olive oil. Salt and pepper chicken generously.
  2. In a separate pot bring water to a boil and cook 3 cups of pasta according to package directions.
  3. Once chicken is done cooking set aside.
  4. In the same pan that you cooked the chicken in, over medium low heat, melt 1/2 stick of butter.
  5. Slowly whisk in 1/4 cup of flour. Be careful not to burn your butter or flour.
  6. Once it is mixed together and smooth, stir in 2 1/2 cups of milk. Continue to stir.
  7. Add in 2 1/2 tsp garlic salt and 1/4 cup ranch dressing.
  8. Bring to a boil, stir in 1 1/2 cups parmesan cheese.
  9. Reduce to low heat and add in your cooked pasta. Give it a good stir to coat all of your pasta!
  10. Pair it with my Homemade French Bread!
  11. Enjoy!

Tips

If your sauce is too thin than add a 1/2 cup parmesan cheese and if it is too thick than add an extra 1/2 cup of milk. When you are melting your butter and adding in your flour it is better for your heat to be low. You don’t want to boil or burn your butter.
