I have been on a buffalo kick lately and I have been loving it. Buffalo Chicken Pasta is my current favorite. It has a little kick, lots of flavor and is easy to throw together on a busy night. The homemade buffalo sauce is a must. Takes maybe 2 minutes to mix together and totally takes this dish up a notch.

My other current favorite meals: Pesto Almond Chicken, Thai Chicken Curry with Coconut Milk and One Pot Chicken Parmesan.

Homemade Buffalo Sauce: This sauce is a must make. It’s what makes this recipe the best. Mix everything in a bowl and then pour into a mason jar or a container with a lid and give it a good shake.

  • 1/2 cup melted butter
  • 2/3 cup hot sauce
  • 2 Tbsp vinegar, white or apple cider works
  • 1/4 tsp garlic powder
  • Mix together 1/2 cup melted butter, 2/3 hot sauce, 2 Tbsp vinegar and 1/4 tsp garlic powder.
  • Pour into a mason jar or a bowl with a lid and give it a good shake

Ingredients

  • 1 large chicken breast
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 can diced tomatoes, 14.5oz
  • 1 tbsp butter
  • 4 cups of water
  • 4 cups penne pasta
  • 1/2 cup buffalo sauce
  • 8 oz cream cheese, diced up
  • 1 cup shredded cheese; I like Colby jack but use whatever cheese you like

Instructions

  1. The best way to cook your chicken is to boil it. Boil until the chicken is fully cooked. Remove from water and shred. *See tips below for the easiest way to shred chicken.*
  2. In a large pot melt 1 Tbsp butter. Add in 1 tsp onion powder and 1 tsp garlic powder.
  3. Pour in 4 cups of water and 1 can diced tomatoes. Bring to a boil.
  4. Add in 4 cups of pasta. Cover and boil about 10 minutes. Be sure to stir often so your pasta doesn’t stick to the pot.
  5. Once pasta is finished cooking reduce heat to low and add in cooked shredded chicken, 1/2 cup buffalo sauce and 8oz diced cream cheese. Stir until the cream cheese is melted.
  6. Stir in 1 cup shredded cheese. Mix until melted.
  7. Enjoy!

Substitutes

You can use store bought buffalo sauce, but I honestly love the homemade sauce the best.

Tips

The easiest way to shred your chicken is using a mixer. Makes it so very easy.
