I love a good sheet pan dinner. Something about just being able to toss it all onto a pan and having a full meal ready is so convenient, it is an all-in-one meal. Honey Mustard Sheet Pan is a great way to get lots of veggies in, but bonus is they are topped with a delicious sauce. It tastes great by itself or on top of rice.

My main goal is to create easy meals that can be enjoyed by the whole family. These days it seems like we are getting pulled in a thousand ways, except toward our homes and our dinner table. Dinner is the perfect time to take a deep breath and talk as a family, doesn’t matter if there are 2 of you or 10. Ingredients
- 2 medium chicken breasts
- 2 1/2 cups diced potatoes
- 1 1/2 cups thinly sliced carrots
- 1 1/2 cups broccoli
- 3 Tbsp olive oil
- salt and pepper
Honey Mustard Sauce
- 1/3 cup honey
- 1/4 cup mustard
- 1/4 cup mayo
- 1 Tbsp vinegar
Instructions
- Preheat oven to 400 degrees. Line baking sheet with parchment paper for easy clean up.
- Bake potatoes and carrots for 10 minutes.
- While potatoes and carrots are cooking make the sauce. In a medium size bowl add 1/3 cup honey, 1/4 cup mustard, 1/4 cup mayo and 1 Tbsp vinegar. Whisk together until it is all incorporated.
- Cut chicken up into bit size pieces. I love cutting my chicken with scissors. It makes it so incredibly easy.
- Once potatoes and carrots have cooked for 10 minutes, add diced chicken, 1 1/2 cups broccoli and half the sauce.
- Bake for 12-15 more minutes.
- Once it is done cooking top with remaining sauce. We love ours served with rice.
- Enjoy!

Substitutes
Use whatever veggies you prefer or have. Some other options are Brussell sprouts, asparagus, onions, peas and corn.

Tips
To make it easier to mix the honey, warm it up in the microwave for about 20 seconds. This makes it so easy to mix with the other ingredients.
