Homemade Sweet and Sour Meatballs Over Rice

Nothings better than homemade expect when it is easy and homemade. These sweet and sour meatballs are a staple in our home that we make all year round. This recipe started with my husband’s family that has continued on with ours and hopefully carries on with yours. We love to use Meatballs Italian Style Beef from Costco. Although homemade meatballs would be so yummy with this, after a long workday and wanting to make something that is quick and delicious the Costco meatballs make this even easier. When making this I like to start the rice after starting the oven – is it just me or does it seem like rice takes FOREVER to cook. Okay enough talking lets get cooking!

Ingredients

2 cups white rice
1/2 cup vinegar
1 cup ketchup
1/4 cup sugar
1 20 oz can diced pineapple
1/4 bag meatballs (these meatballs come frozen and are precooked)

Instructions

  1. Preheat oven to 425 degrees.
  2. Place rice in rice cooker and cook according to directions. We use 2 cups of rice 2 cups of water and hit quick rice.
  3. Use 9×13 pan
  4. Add to pan a 1/2 cup vinegar
  5. 1 cup of ketchup
  6. 1/4 cup sugar (you can use less if your ketchup has a high sugar content)
  7. Mix these together with a fork.
  8. Add 1 can of diced pineapple with juice
  9. Dump in meatballs. I usually use a third of the bag. We like leftovers in our house and there is only two of us eating.
  10. Bake for 25 minutes
  11. Once done place rice on plate and place meatballs on top. Spoon on some of the sweet and sour sauce on top. Enjoy!
